Q: I am pregnant and absolutely craving garlic like I cannot believe. I put it in everything, but I have been searching high and low for rich, healthy, and dairy-free soup or other recipes that are super garlicky. I have been spreading roasted garlic on bread, that's how serious this thing is!

Hummus! Super garlicy homemade hummus is so good...
I would make a super garlicky hummus using both roasted & raw garlic. You could eat it by the spoonful, spread it on wraps/sandwiches, thin it out to use as a dressing or sauce, etc, etc...
Yeah, I'd definitely go with some spread to add to lots of different things. Baba ghanoush would be a good option, too.
Roasted cauliflower and garlic soup packs a nice garlicky punch. Ina's 40 Clove Garlic Chicken would fit the bill, too.

Garlic Dip!!!! It's my favorite! You can get it at just about any decent Mediterranean restaurant but it's super easy to make:
Get a ton of garlic cloves ( fresh!) dump them in your food processor or a blender and whiz them up. Slowly stream in olive oil til it looks like a thick mayonnaise. Done! Mix in a little fresh lemon and some salt and pepper if you like and prepare to smell like garlic for days .SO good!
I saw a tip to neutralize the garlic burn you get from raw garlic but for the life of me can't remember. Anyone?

If you can handle spice, Mark Bittman has a great recipe for kimchi in his Food Matters cookbook. It includes lots of raw garlic, in addition to soy sauce, ginger, and chilies.
Aglio e olio! (Spaghetti, olive oil, garlic, lemon juice, optional pepper flake & parm.) I use America's Test Kitchen's recipe, but they're all over the web. ATK's recipe cooks most of the garlic in the olive oil, but another portion gets added in at the end. Those preparations together make for strong garlic flavor! Also, congratulations on your pregnancy!

I second hummus and spaghetti aglio e oilo (I like to throw some mushrooms and sun dried tomatoes in mine). A good garlicky guacamole is also a great way to get calories and nutrients if you've been finding eating nutritiously to be challenging (I did during my first trimester, and am once again now in my third). Another favourite is cheesy polenta with greens (kale, chart, spinach, whatever) sautéed with garlic and chile flakes.

I second this soup! But actually wouldn't be worried about smelling like garlic for a week after, I didn't experience that at all! The garlic mellows through cooking and it comes out tasting amaaaaazing.
Spaghetti aglio olio - Basically, pour plenty of olive oil in a saute pan and turn it on very low heat. Add sliced garlic (and maybe some crushed red pepper flakes) and gently cook until the garlic is super soft and sweet. Season with salt (and pepper if you like). Toss with spaghetti (add parsley and parmesan if you like) and enjoy. It sounds simple but it's seriously good.
I second Alton's 40 Clove Chicken. It's delicious, but it's the most garlicky recipe I've ever tasted. Plus, watch his Good Eats episode on garlic.

Chop as many cloves as you want into little chunks and carefully brown and crisp it in some olive oil. Eat on whole wheat spaghetti, add parmesan.

Patricia Wells has a Garlic Soup recipe that I imagine would help (it also seems like it would be good for a cold!) A simplified version is here: Basically take 2 onions, 6 shallots, one head of garlic and sautee with herbs (parsely and tarragon), then add in 1.5lbs of cubed potatoes and then broth. Bring to a boil, simmer and puree. Garnish with fresh herbs.

I make a soup I like to call BSG soup. That stands for beans, spinach and garlic. Saute a sliced onion until golden, add lots of minced garlic and saute another minute. Add 8 cups veggie stock and bring to a boil. Add 2 cups small pasta (I like using wheels for this recipe) and boil for one minute less than the time recommended time on box. During that last minute add 2 large bunches fresh spinach and one can drained and rinsed cannellini beans. Turn off heat after last minute of boiling and stir until spinach is completely wilted.
This is a major crowd-pleaser and has tons of garlic flavor. I like to serve it with garlic bread.
Just eat garlic cloves raw! Or I guess, you could roast a head and then spread it on toast.

Try this recipe from DigginFood and add as much garlic as you want! I always use at least four cloves and this recipe is an absolute house favorite, especially with the colder weather coming. I also often use red pepper flakes rather than fresh peppers and it is still delicious. Congrats!!!

I have prepared both of the soups, and they are rich, healthy, dairy-free, and adaptable. You could add different herbs or spices, or add more garlic to the Butternut Squash Soup. The soups freeze, too!
