Q: Because of the Jewish rules around the Sabbath, I often end up in a situation where I have guests for lunch on Saturday, but all of the prep and cooking needs to be done by Friday afternoon. And given all of the rules, it's so much easier not to worry about heating things up.
There are great lists of recipes for cold summer dishes, but what are some nice vegetarian dishes that can be prepped ahead and served cold that are better in other seasons?

Quiche is always good a room temp, if your meal is dairy. Just give it an hour or so to let the chill dissipate after you take it out of the fridge.

I have been dreaming of making a meal out of things on a mezze platter, so I'd go there. Hummus, roasted peppers and carrots, homemade pita, feta, i would probably add some pickled things or fancy olives in there.
