Q: My best friend's infant daughter is in the hospital. They live about 400 miles away. I'd like to send her something helpful like food so they can just grab a healthy snack while they're in the hospital with her.
Any thoughts for healthy snacky foods that ship well?

And even though you want to keep it healthy, we think that a big box of chocolate chip cookies might also be a sweet note of comfort in the middle of difficult circumstances and hospitalization.

I don't know if these are "healthy", but biscotti can be made in all sorts of ways with nuts, dried fruit in any combo and ship well. Best wishes for your friends.
Kale Chips and Roasted Chickpeas are great options. Google for a recipe that appeals to you, though I use the ones from Fat Free Vegan blog.
Also, a selection of dried figs, dates, berries and nuts is always good for energy.
Lastly, you can try making your own instant oatmeal single-serve packs. Put quick oats, dried fruit, a bit of brown sugar and cinnamon in a snack sized ziplock. Lable each one, and send a portable bowl/spoon set along with the gift. That way they can just get hot water from the cafeteria, and not have to spend for breafast! Idea stolen from Vegan Lunch Box blog.
Snacks that are meant to be hard already seem like a good idea. For example, oatcakes are a simple and really healthy snack.
This is a great question because the truly healthy snacks are fresh fruits and veggies - but there are some great packaged snacks too (and ones you can make that don't require refrigeration). Check out http://www.snack-girl.com/ for snack recipes and packaged snack ideas.
