Making granita doesn't require an ice cream maker. All you need is a fork and a little free time to stir the mixture as it freezes. For this recipe, though, you might consider a different gadget: a cherry pitter.

The color of this cherry granita is so saturated and beautiful. If you're imagining stains on napkins and tablecloths (we are), maybe make this an outdoors treat.
The recipe says you can process the mixture two ways — in an ice cream maker, for a more sorbet-like texture, or the traditional, manual way. It calls for five cups of cherries, hence the need for a pitter, plus a cup of dry white wine. Sounds very sophisticated.
