Summer is synonymous with cold salads, Popsicles, and grilled food. It's the time of year when you're supposed to say goodbye to your oven (unless you're making pie), and opt for simple, fresh meals. It's the time for weekly trips to the farmers market, tons of seasonal vegetables and fruits, and lazy beach days. It should be all about lazy cooking.
So why, all of a sudden, am I obsessed with roasted sweet potatoes?
Last week when it finally felt like summer and it was sweltering hot, my AC decided to give out in my apartment. I was walking around with an ice pack in my hand and taking multiple showers a day to cool down. So fun! And yet, when it came time to make lunch or dinner, I had no problem turning on my oven, peeling and dicing a sweet potato, and throwing it in the oven for 30 minutes.
And you know what? It was totally worth the added heat in my apartment for the next few hours.
Maybe the secret to my summer obsession is just how good sweet potatoes are on otherwise cold salads. I've been making a simple chopped salad with cucumbers, parsley, and chickpeas — a true "What do I have in my kitchen?" salad — and topping it with the roasted sweet potatoes and a big dollop of crème fraîche.
The resulting combination is cold, and hot, and sour, and crispy, and herby, and super luxurious. This simple recipe makes me feel like a mad genius in the kitchen, and almost makes me forget how uncomfortably hot I am while cooking.
