Before you drain that can of chickpeas, know that you have one pretty tasty dessert component on your hands. Save the liquid, called aquafaba, and it in fact can be whipped up into a sweet vegan icing for any and all treats.
The Power of Aquafaba
While aquafaba can be used as a vegan egg replacement, it can also be whipped with sugar and vanilla to mimic cookie or cake icing. Whipping it in a stand mixer for a solid 15 to 20 minutes allows it to form extra-stiff peaks, thanks to the protein and carbohydrates that are naturally found in the liquid. The result is a vegan icing that can be piped onto cupcakes or spread onto cakes or cookies.
