Pizzelles are a pancake-like Italian cookie, baked on a hot iron and similar to the Scandinavian krumcake. The irons are usually made in elaborately lacy patterns that are imprinted on the crisp wafer cookie; in the old days, the Italian pizzelle molds often had the family crest and were passed down through generations.
Pizzelles put in a regular appearance at every large family gathering we've ever been to, and we love that lacy, melting crisp bite. These Chocolate Peppermint Pizzelles from Food Network look scrumptious, especially with the minty chocolate filling. Think you might actually need a pizzelle iron? These are far too specialized for my kitchen - my great-uncle carries all the pizzelle-making duties in my family - but if you're interested, here's a model from Kitchen Niche, $56.04.
Have you ever made pizzelles or another griddle cookie?
