Q: I am loving all these recipe suggestions for homemade marshmallows - but because I live in Germany, corn syrup is not available (and all recipes seem to contain it)!
Do you have any recipes that do not contain corn syrup? Thank you!

Editor: Emily, one thing you can try is making your own corn syrup substitute using regular granulated cane sugar:

We've also heard that Golden Syrup is very similar to corn syrup and is more available in Europe. We wonder if this could be used in marshmallows. Has anyone tried?

You can try using Hugh Fearnley-Whittingstall's marshmallow recipe - no corn/golden syrup and uses beetroot for the pink colour! Recipe here.
The first recipe I ever tried was actually Giada's and it is amazing. No corn syrup. It uses evaporated milk instead. I have changed up the flavors many times and I get rave reviews over the recipe with corn syrup that I have tried a couple times to see the difference.

I always use agave nectar in place of corn syrup. I don't know if they sell that in Germany, but it works great!

here are two that do not use corn syrup --
with honey or golden syrup, no eggs --

You could sub out the corn syrup for glucose, if that's more available to you. Also, Lyle's Golden Syrup or even an equal amount of honey would work well if you don't mind the taste.

I struggled with this too, being in the UK. It works if you use Golden Syrup - which is found all over Europe!
Thanks to the OP. I am in Slovenia and have been itching to make marshmallows for ages. We don't have golden syrup or corn syrup here, but I'll have a look at some of these other options. Can't wait to try!
Here's a recipe for Passionfruit Marshmellows. I have eaten these at Rockpool restaurant and they are delicious! They just use sugar, gelatine, egg whites and passionfruit juice.
I don't think golden syrup would make a good substitute for corn syrup unless you want the strong flavour that golden syrup has.
