Eggs! We love eggs. Here at the end of January, with short busy days, and little free time, we rely on eggs like nothing else. I love poached eggs, too, and can't wait til summer so I can get just laid eggs from my local farmers market. They are so much more tasty!

Slow-scrambled eggs with feta, mmmm, mmmm, good.
Poached eggs fresh from the chicken, awesome! I used to poach eggs and dump them over salads. (I haven't done that here because I can't get fresh eggs- only supermarket ones). My hubby loves eggs too. Duck eggs were our treat from the farmer's market.
What about eggs in a basket? My new and favourite egg-related discovery!

1. Eggs florentine
2. Sopa de Ajo with a poached egg inside, so when you break open the yolk it spreads and flavors the whole delicious bowl.
3. A warm spinach and bacon salad topped with a poached egg. Again, the delicious yolk goes a long way in flavoring the entire dish.
4. Wonderful, simple egg noodles tossed with just enough olive oil and some parmesan cheese.

I love eggs. I love eggs like Cool Hand Luke style and this post totally takes me back to my childhood in Cape Cod, eating soft boiled eggs out of porcelain egg cups. Now I eat them any style, any time of the day. Usually on a plastic plate.

I love a whole egg dropped into a Japanese-style "hot pot" of broth and vegetables, and sometimes noodles.
I like to scramble eggs in high heat - well explained in the Zuni Cafe Cookbook. As the water evaporates, the egg proteins extend, giving you very light fluffy eggs.
