Mom taught me to use the edge of the bowl; Jacques Pépin said use the countertop. Sorry Mom, Jacques wins here.
When I use the countertop, I end up with egg all over the place or with pieces of shell in the bowl. Tapping the egg on the edge of the bowl works better for me.
All of the above? I'll crack it on whatever looks clean...
I use my CrackPot from Fusionbrands! It has built-in "blade", it's my husbands favorite kitchen tool. http://www.fusionbrands.com/products/crackpot
Growing up I cracked it on the side of the bowl because that's how my mom did it. However, I now do it on the countertop (or cutting board) because I tend to have less shards of shell that way. My grandmother used a knife crack eggs.
Whichever way I crack them, I end up with shards of shell in my eggs. Never happened when I was a kid though. I blame the eggs.
I've never heard of doing them on the countertop!
Do you do it on the edge, or right on the flat surface??
I always crack it against another egg.
Countertop, though when I used to be able to one-hand it, against the bowl edge, because to do that trick, you need a clean, deep crack. :)
My mum taught me to crack the egg on the side of a cup, then transfer the egg to whatever I was making so that a bad egg wouldn't spoil the rest of my ingredients.
For a long time I was scared of breaking eggs, I think when I was really young I tried to break and egg and just smashed it, and so perceived eggs as far more delicate than they are.
I use the side of a fork, it's how my mom does it.
The side of a measuring cup and then the egg goes into the measuring cup. Mainly because it makes it easier to get any bits of shell (it's such a pain to pick them out of a big bowl of ingredients). The countertop method seems like it could get messy!
My boyfriend will just hack eggs open with a knife! I use the side of the bowl myself.
