After urging everyone
to get outside, take their own bag, and do something generally good for the planet yesterday, we feel compelled to report back.
It was a gorgeous day, literally scented with crab-apple blossoms. We walked (didn't drive!) to the (simply amazing) neighborhood café, which was giving away its (simply amazing) veggie burgers for free in honor of Earth Day. We were heartily grateful, my dining companion and I, for this delicious way to celebrate the day. Their burgers are flame grilled, rich with beets, brown rice, and other crispy and chewy unidentifiable bits. We're working on that, but don't have a lot of hope of recreating the recipe! It's superb - really the best veggie burger we've ever had, and just as good as meat, in its own way.
So we went veggie for the day, and had a small breakfast and lunch, keeping it light.
Then we went off to Whole Foods (canvas Trader Joe's bags in tow!) and got into a long, long conversation with the fishmonger about Dover sole, gray sole, West Coast sole, and sole meuniere in general.
It was a lovely Earth Day, and we hope that you enjoyed the sunshine, good food, and the pleasure of living simply and attentively on the Earth yesterday and going forward as well.
Did you do anything special, and if so, how did you observe the day?
