Q: I am looking to re-create "Shake 'n Bake" at home. I have been successful getting a crunchy texture using panko style bread crumbs, but the flavour comes out either too salty or not flavorful enough.
We also love the flavour of KFC and their 11 herbs and spices — recreating that in an oven-friendly recipe would be great as well!
Any tips?

Have you tried adobo? It is perfect flavoring for chicken I find.
MSG and yeast in the breading mixture will help get you towards the flavor of shake and bake.
T, this is the closest I've ever come to KFC flavor:
2 teaspoons dried thyme
2 teaspoons dried oregano
2 teaspoons dried basil
2 teaspoons garlic powder
2 teaspoons kosher salt
2 teaspoons fresh black pepper
2 cups plain nonfat yogurt
2 cups panko
6 pieces of your favorite chicken parts (BSB, thighs, whatever)
1. Preheat the oven to 375°F.
2. In a large plastic bag, combine the thyme, oregano, basil, garlic powder, salt and pepper. Shake well. Add two breasts at a time to the bag and shake to coat the chicken. Continue until all the breasts are coated.
3. Place the yogurt in a large bowl, and the panko on a large plate. Dip each breast in the yogurt and then in the panko. Place the chicken breasts on a baking sheet sprayed with nonstick cooking spray or olive oil.
4. Bake for 35 to 45 minutes, until the chicken is brown and cooked through. Do not cover or turn the chicken during the baking process.
5. When the chicken is completely cooked, remove the baking sheet from the oven and let cool ten minutes before serving.
Sometimes I'll throw in a pinch of cloves, too. Hope that's helpful!
The secret list is:
1 tsp. ground oregano
1 tsp. chili powder
1 tsp. ground sage
1 tsp. dried basil
1 tsp. dried marjoram
1 tsp. pepper
2 tsp. salt
2 TBSP. paprika
1 tsp. onion salt
1 tsp garlic powder
1 TBSP Accent
Mix into your breadcrumbs with a little flour and then bake.

I read a recipe years ago that said a packet of Good Seasonings Italian Dressing had the right amount of spices to mimic KFC's 11 herbs and spices.
The book "Big Secrets" did lab tests on the KFC coating mix. This is what they found: flour, salt, monosodium glutamate, and black pepper.
I believe it.
You'll get spiced chicken with the mixes above but you won't get the same flavor unless you add MSG or its cousin "yeast extract."

jrgutknecht, what the hell is "Accent"? If what you mean is MSG (since this is the main ingredient in the KFC coating), why don't you just say so?

Accent is just a brand name, it's the same as MSG.
I used to work at a KFC about a decade ago. Their chicken is pressure deep fried. I think that the process has a lot more to do with the flavour than their secret spices. I guess I'm biased, but iiiiick.
