Q: A friend of mine loves Edy's Peanut Butter Cup ice cream, but she doesn't live in the U.S. Has anyone re-created it or have any ideas on what ingredients to use? Any tips would be greatly appreciated!

Editor: I'd start with one of these recipes for the ice cream base, and then add either chopped peanut butter cups or mini peanut butter cups (I buy them at Trader Joe's!). You could also swirl some plain peanut butter into the ice cream base for extra peanut butter fun!

Looks like the editor has it in one. You might want to make sure the candy is sorta warm and soft so that you get a little more blending effect.
Here's my recipe for Peanut Butter Cup Ice Cream, but you can add any mix-ins you prefer to the peanut butter base. Hope this helps!

Take vanilla ice cream, either vanilla bean or French vanilla, swirl in softened peanut butter (a few seconds in the microwave does the trick) and chopped peanut butter cups - or - just chopped chocolate if you don't have the peanut butter cups. If you do it by hand, you'll likely have to refreeze the ice cream for a few minutes before eating, with a paddle mixer it won't start to melt as quickly especially if you pre chill the beater & bowl.
I used to make homemade flavored ice cream all the time but now I just make vanilla or buy commercial (in half gallons) and then blend in a combination of flavors to suit (spices, apple or caramel sauce, various flavors of jam or chutney, frozen fruit, chopped or melted chocolate, nuts). It's soooo much easier and you'll be surprised at how quickly you can blend flavors that accurately recall your favorite commercial ones.
The recipe in Jeni's Ice Cream for Buckeye State ice cream with the chocolate freckles is amazing - one of my family's favorites!
