How Can I Make a Fantastic Strawberry Cake in Mid-November?

Q: My soon-to-be 3-year-old has requested a strawberry cake for his birthday. Strawberries are by far his favorite fruit. I questioned him about the cake, and he insists that this is a pink cake with white frosting and strawberries on top. I can do the cake pretty easily, but the November berries are really lacking in flavor and awesomeness. Any ideas?!

I thought the Kitchn readers might have some great suggestions for the top of our cake. I get that he's just 3 and he'll probably be happy no matter what we do. That said, he doesn't ask for much, and if there's a way to do this deliciously, I'd love to do it right.

Editor: What about using slices of freeze-dried strawberries to decorate the top of the cake? That might do the trick! Also, take a look at our pink strawberry milk cake — it might be another way around using mid-November lackluster strawberries:
