Q: My husband and I love all kinds of hot sauces, so we always have several different kinds in the refrigerator. There is one, however, that always grows mold within a few days: harissa.
The first time I stored it in the original can, covered with plastic wrap. Okay, rookie mistake. But the second time I put it in a glass jar and covered it with olive oil... only to discover it covered in mold again. What am I doing wrong?

Editor: Luiza, I typically store harissa in a glass jar covered with a layer of olive oil and it lasts for a long time in the refrigerator, so I'm not sure what happened with your jar.
Readers, do you know why this harissa might have gone moldy? Any advice for storing harissa so it stays fresh longer?
