Help Me Get More Gingerbread Flavor In My Pancakes!

Q: I LOVE the recipe for Gingerbread Pancakes with Cranberry Maple Syrup from CountryHome, but the pancakes (lovely, hearty little silver-dollars!) simply are not "gingerbready" enough for me.

Can The Kitchn foodies help me get my gingerbread on??

The first thing we'd try is simply increasing the amount of spices in this recipe. Try adding another half teaspoon of each spice and see if that does the trick.

You might also think about making your own pumpkin pie spice mix. That way you can better control the strength and freshness of the spices you're using. Also, take a look at our recent recipe for Gingerbread Waffles (which can also be made as pancakes!). We haven't had a chance to make these yet ourselves, but the description sounds gingerbread-y to the max!
