Q: I made your Super Soft Snickerdoodles last year and they turned out great! I want to make them again this year, but since then my sister has been diagnosed with celiac disease. Does anyone have tips for converting cookies to a gluten-free recipe? Is it really as simple as substituting a gluten-free flour?
If so, what kind works best for soft cookies? I'm overwhelmed by the various alternative flours available and am totally baffled by xanthan gum!
