My boyfriend said Jello was his favorite slow cooked dish. Ha! Mine has to be bean soup...there is a great bulk mix of dried beans sold at the Good Food Store in Missoula, MT called Seven Bean and Barley Soup mix (all that is in the mix are the beans and barley). After soaking the beans overnight, you saute an onion, put the beans in the pot with 8 cups of water, bring it to a simmer and in a few hours you have really amazing soup! It is really easy, and really good! Perfect for a rainy day with a big slice of pumpkin bread. Mmmm!

Chicken and Dumplings..very good..
My favorite slow-cooked dish is fairly simple. My mother makes a slow-cooked beef roast that's seasoned with typically Italian seasonings, then shredded and served on rolls. I wanted to make it (it was a cold rainy fall day, and I wanted comfort food), but beef is so expensive! However, since I live in a predominantly Jewish neighborhood, pork is always fairly cheap. So I got a Boston butt, trimmed it well, rubbed with a little olive oil and then coated it with rosemary, red pepper flakes, minced garlic, a little lemon zest, freshly ground black/white/green/pink peppercorns, and salt. Tossed it in a low oven for a few hours until it was falling apart, then shredded it and mixed it with diced (canned) roma tomatoes and let it simmer away in the oven for another hour or two. Yum! Great on sandwich rolls, over polenta, you name it.

I know this sounds odd, but if you buy a big inexpensive cut of beef and massage a packet of Lipton onion soup onto it and put it in a big pot of...coca-cola...and let it cook slowly for several hours, it is fantastic! Sweet & savory and the acids in the coke tenderize the meat.

My favorite thing to slow cook is a root bake. I make mine with ground turkey burger and throw in potatoes, sweet potatoes, carrots, parsnips, or beets. I drizzle a little bit of oil over the top, sprinkle with pepper, cover and throw in the oven at 375. It takes about a half hour to fourty-five minutes to cook. I take the cover off and stir all of the ingredients together and either eat it as is or add some kind of sauce like BBQ or terryaki to it and let it cook a bit longer. It is quick, easy, good for you and tasty!

1 6 oz can tomato paste (Italian)
4 oz. chopped green chilies undrained
1/4 c fresh parsley or 2 Tbsp. dried
2 Tbsp. chili powder
1 1/2 Tbsp brown sugar
1 Tbsp. vinegar
1 tsp. cumin seeds
1 tsp. salt
1 tsp pepper
3 cloves (can remove after an hour, but I usually don't)
1 bay leaf

Cook beef and pork in skillet, drain fat. Add the rest of the ingredients, cover and simmer for 1-1/2 hours. Add beans the last 30 minutes.
