Q: I love my CSA but I have been getting radishes for the past 6 weeks!
I am in desperate need for something to do with them besides eat them with butter/salt or slice them into a sandwich/salad. Help!!

Editor: Well, you could pickle them, make chips or a rose. But I think that I would really suggest braising or roasting them; have you ever had a hot, juicy roasted radish with olive oil and sea salt? Absolutely delicious.

I second the pickling. Several recipes on Punk Domestics, http://www.punkdomestics.com/search/node/radishes, including options that don't require canning.
Try roasting them. My wife and I have enjoyed roasting our CSA radishes in the oven after coating them with some olive oil, sea salt, and black pepper.
I second the roasting/braising idea. They're awesome. A few additional ideas:
1) I just made radish pizza last night - sliced them thinly and put them on top. I might cut them into smaller wedges first next time to make it easier to bite through, but it was good.

3) This won't use up a whole bunch, but they're a great taco topping, especially for rich/fatty fillings.

Love them cut into quarters and sauted in butter, seasoned with s & p. simple and tasty. I had them that way with a pork chop earlier this week.
I love sliced radishes in my soft tacos.
Here is a great radish salad or this quick pickle recipe which is great as a salad on in a salad.

Radish slaw!
4 cups shredded radishes (about 40 radishes)
2 cups finely chopped yellow bell pepper
1 1/2 cups shredded carrot
1/2 cup white wine vinegar
2 teaspoons Sugar
1 tablespoon chopped fresh dill
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Shred everything up and mix everything together.

I've had caramelized radishes with a port glaze. They were addiction worthy.
Thinly slice, toss with your favorite oil and seasonings and grill until translucent. Sweet and yummy. This even works on an electric counter top grill.
I like roasting them, cutting them up into tuna salad, tossing them with lemon juice/olive oil/garlic/pecorino romano dressing, slicing them onto sourdough and sharp cheddar for da-bomb-dot-com sandwiches, and any of the ideas listed here:

I use the radish leaves to make pesto, and then slice the radishes (among other things) into a pesto pasta salad!

I also love using them in stir fries and soups.
They are great in guacamole. Just mince them and add to your regular guacamole recipe- they add a nice extra bite.
I'm with the folks calling for roasted radishes. They're delicious! Seriously. I also like them sliced very thinly in salads and on a sandwich. Sometimes they can be used as a garnish or side for some mexican recipes.
slice them up (greens and all) and sauté them with garlic and olive oil. Roast them, toss them in stews, they make a delicious snack w/ bread and butter, they are great in all types of salads (chicken and tuna included). Or just share with friends!
For a change you can grate them into a spinach salad (also grate some carrots)! Sauteed radishes are lovely (esp if you use butter). You can also slice them and put them on top of ramen/soba noodles and they'll get a little squishy from the hot broth.
I agree with those who recommend sauteeing. It works best with young radishes, but I've done it with mature ones too and it's still tasty. The butter really mellows the flavor. S&P is really all you need, or you can toss in some fresh herbs like basil, mint, etc. Simple and quick side dish.

Great question! I have a favorite recipe that uses radishes on a sandwich, but I always have some leftover. I was just wondering what to do with the dozen or so radishes in my fridge right now, I will have to try some of these suggestions!
