Q: My husband and I just returned from Brittany, France. We dined unbelievably well, but one dish stood out. It was white fish (cod?) cooked in a Camembert cheese sauce. It was heavenly. Any suggestions for similar recipes involving fish with cheese sauce? Thanks!

I've never had anything like that, but it sounds delcious. If you google cabillaud (the french word for fresh cod) and camembert, a few recipes come up in French, that you can probably use Google to translate. This one seems to be pretty basic, melting 1/3 of a wheel of camembert with some cream until the camembert is melting, then adding a splash of Calvados (apple brandy).
This one takes a seasoned filet, slices of camembert and slices of pre-cooked apple and wraps them in a phyllo-type pastry and bakes. Another bakes the fish and cheese in parchment paper, with slices of onion, lemon, mushrooms and a dash of white wine. I haven't had the dish you're referring to, but these look delicious!
Well I live in Brittany and never heard of such a recipe but it sound awesome ! It's probably a specific recipe from a chef. I have a recipe for a camembert sauce used as a salad dressing actually. Melt half a camembert cut in squares (without the crust!) in the microwave for 2 minutes, then add some cider vinegar (2 tbsp) and blend well. I'm glad to hear you enjoyed the food, we are pretty lucky here...
