Help Me Plan a Menu of Entirely Cold Dishes

Q: My husband will be coming home from a three-week trip soon, and I have to drive two hours to pick him up from the airport.

I would love to have a nice meal already made for him, but the problem is the heat. With no A/C in our apartment, I want the 2 to 4 course meal to be entirely cold dishes, if possible. Ice cream for dessert sounds great, but what about the rest of the courses? (No gazpacho, please!)

Editor: Susanna I would suggest a hearty salad with chicken, paired with a crisp salad and perhaps some fruit. Try this dill and yogurt chicken salad, or Italian chicken salad, or this chicken salad with wild rice (pictured above).
