Q: Some friends and I are planning a "kitchen-weekend," where a different couple cooks a 3-course meal each night. I still haven't thought of my menu, and definitely need help! The only kinds of meat allowed are veal, chicken and duck, or dishes should be vegetarian. Any great menu ideas?

I would do Jonathan Waxman's chicken with salsa verde (amazing and easy), some sort of quinoa or other grain salad and green beans or whatever veggie looked best at the market.

and I would do a bruchetta for the ap and a fruit crisp for the dessert.
Asparagus soup for starter
Roast chicken is ridiculously easy (there was a post on here about it recently and it made my first (and every one since) chicken turn out perfectly), pair it with some garlicky sauteed greens (chard? spinach? CREAMED spinach?) and roasted potatoes and vegetables. Almost everything can be done in the oven!
Pie for dessert (rhubarb is in season now!)
Mexican! Chayote soup. Elote. Black bean & bell pepper fajitas. Guacamole. Fresh fruit salad for dessert.
I was coming to suggest a roasted chicken with some seasonal veg and a crisp, too. Haha. Great minds!
