Q: I want to try a high-temperature turkey recipe by Alton Brown. The recipe uses a half sheet pan instead of a roasting pan (with a roasting rack to elevate the turkey). It needs to withstand a 500-degree oven for 30 minutes, plus the rest of the roasting time, so it has to be heavy-duty and not warp.

One comment recommended multi-ply so it wouldn't buckle. Any suggestions?

Editor: Readers, I know many of you love Alton Brown's turkey recipe, too! What kind of half sheet pan (and roasting rack, for that matter) would you recommend?

We're always fans of the heavy half sheet pans found at restaurant supply stores (they're usually quite inexpensive too).
