Q: I'm going to a dinner party next Friday to celebrate the Olympic opening games. We're all supposed to bring a dish that represents a different country, but I'm stumped! I'd like to make something vegetarian because there will be a few in attendance.
Any suggestions? Russia, China and France are already taken.

How about an Indian dish - lots of vegetarian options.
What about the host country? Make some poutine? Vegetarian and one of the best (and worst, I suppose!) comfort foods in the world!
I suppose you'd want a dish from a country that typically does at least reasonably well in the *Winter* Olympics? With that in mind:
-Swedish Meatballs
-Sauerkraut (Germany)
-Pierogies (Ukraine)
-Wiener Schnitzel (Austria)
-Sushi (Japan)
-Tourtière/Meat Pie (Canada)
And if you want to cheat and France (or Germany) is already taken, you could claim Switzerland and do something French, and just say you're thinking more of Geneva than Zurich. :p

On the other hand, I say you go w/an obscure island nation and bring something really interesting.
Whoops! I totally missed the vegetarian part! My bad!
You could still go with pierogies and just skip the bacon that sometimes goes with 'em!
As a Canadian, I second the idea of going Canadian!
Maple ice cream. Poutine with vegetarian gravy. Frybread or bannock. Bumbleberry pie (a mixture of fruit, berries and rhubarb). Beaver tails (if you're handy with a deep fryer). Butter tarts. Sugar pie.
So many fun foods... and so many of them desserts. Yum!
Great Winter Olympics Countries and some vegetarian foods:
Italy - SO many options - any lovely meat free pasta dish like lasagna or gnocchi will work
South Korea - Bibimbap - is a great rish and kimchi dish topped with a fried egg - yum!
Japan - homemade sushi is always fun
Austria - spaetzle is delicious and vegetarian

One word: POUTINE!!!
Poutine is generally made from gravy, which is NOT vegetarian. I suppose you could make vegetarian gravy, but that's just not the same... (plus it kind of creeps me out as a vegetarian...)
Ok, I suppose I should favour a Dutch dish with us being ranked favourites at the speed skating and all, but I can't think of anything that's fit for a dinner party!
So instead, I 'third' the Italian italian idea! Go for vegeterian starters: a big plate of grilled peppers with pine nuts and sea salt - tomatoes with basil and mozarella - grilled bottled perppers, aubergines (or humous), zuchini's, olives - some nice fresh bread. It'll really get the party started!
When you said "Vegetarian" I immediately thought "INDIA!" but I'm not sure they compete (I must confess I've never watched the Olympics before).
What about England? You could do pasties and just make them vegetarian (they're savory hand pies, in case you've never heard of them and the "a" is said like the "a" in "bat"). Or actually curry would work for England, too, it's practically a national dish.
One of my favorite Japanese dishes is donburi, a rice bowl that can be topped with whatever you like, though my favorite is tonkatsu (fried pork cutlet) and a sweet/savory broth. Udon and ramen are delicious too (and easy, I think) and it's been soup weather here in California.
