Hellmann's in the United Kingdom reports that they'll be using free-range eggs in their mayonnaise from now on. We think this is a good idea. Free-range eggs come from chickens that are not caged inhumanely and are allowed to roam outside in the sunshine and peck at grass, the way chickens should. When we buy mayonnaise in a jar, we really love the taste of Trader Joe's Organic Mayonnaise.
However, we also love making our own mayonnaise. Homemade mayonnaise is incredibly easy, and we think every home cook should try it at least once.
