The 5 Uses for Leftover Rice post from yesterday was perfectly timed, as we were whipping up some of our own version of garlic fried (leftover) rice with eggs. Although we weren't camera ready (just hungry), the premise and our DIY recipe is easy:
Do it yourself:
- Fry up a couple cloves of garlic until golden brown (add more if you are a garlic fiend)
- Stir fry your rice with a little oil (wok recommended)
- Fry two eggs (you could also scramble them, if preferred) and place on top of a bowl of fried rice
- Garnish with the fried garlic, rice wine vinegar (we like A LOT of it and use Datu Puti "Sukang Maasim" spiced white vinegar which combines distilled vinegar, water, onion, hot pepper and garlic; we've also made our own simpler version with just hot peppers and vinegar), and salt to taste
Although not especially healthy, it is incredibly delicious, inexpensive, and simple for breakfast, lunch, or dinner. Anyone else a fan?

Yum, rice with Fried eggs and spam! Or you could make Spam musubi (like a spam sushi - from hawaii).
I'm a huge fan of the "sinangag" (that's what Filipinos call this rice dish) and I'm so happy it found it's way here. The rice and eggs are commonly paired with various meats. My favorites are "tapa" (salt-cured beef which resembles beef jerky) and "tocino" (cured pork on the sweet side). Yummy. I think I'll have some for dinner; luckily, eateries here in the Philippines offer these meals all-day. :)
That's a cute graphic, considering you weren't able to photograph the actual meal. I could totally picture myself eating this, drowned in sriracha, on a hung over Sunday morning.
My mom (a Filipina) made this growing up. A variation using the leftover rice, garlic and egg combo is also adding some tomatoes and onion to the stir fry. Sprinkle a bit of soy sauce at the end.
