A couple weeks ago it was deep-fried avocado. Now — something simpler. Have you ever roasted an avocado?
Jules at stonesoup says that it is remarkably delicious, and she has a suggestion on how to roast an avocado, and what to do with it. She says that a roasted avocado is meaty, substantial, and surprisingly delicious. The recipe she concocted to show off its flavor and texture is simple: Red onion, couscous, lemon juice, and a handful of lettuce leaves.

I don't know why I never thought of this before either. We always have avocados in the house so I'll have to give this a go.
Bittman just had a recipe for grilled guacamole in the New York Times. I really liked how it turned out - an interesting twist on guac!

Avocado is one of my (many) food obsessions. I've only tried cooking it once and it was unparalleled disaster, which I believe ended in getting take out, however, I'm intrguied by roasted avocado couscous (also love couscous) and the link Slow Lorus added from the grilled guac! Though I'm not sure it's possible to make guac better...I'm willing to try!
I unfortunately can't get on board with this.....cooked avocado just doesn't taste good to me!

Considering how much fat is in avocados, the fried recipe is like a fried stick of butter.
But avocado is better than butter. And healthier.
i'm with ya lilbetty - cooked avocado just doesn't taste good, in my opinion. it sounds so good that i've made this mistake several times, thinking that each recipe i tried was surely a stroke of genius.

My mother seems to think cooked avacado tastes fishy! I've never eaten fish, so i wouldn't know about that, but i love cooked avacado! It's especially good on pizza.. a few slices of onion, tomato, some avacado, olives, garlic and rocket (arugula to you folk!) mmm... the perfect pizza!
i found a broiled avocado recipe on pinterest. halve and pit your avocado, score the meat, squeeze on some lime juice and hot sauce, broil for 3 minutes, add cotija or parmesan cheese to the hole from the pit, broil until the cheese melts, and devour with additional hot sauce.
