I don't think there's anything that more obviously screams summer than a slice of watermelon, on a paper plate, on a picnic table (or maybe a bathing suit-clad lap that's sitting at a picnic table). What's great about watermelon in the 21st century is that now you can not only eat it for dessert or a refreshing snack, but you can also drink it, or sprinkle it with savory things, or even dry it!
I recommend playing with your watermelon a little before it's too late and summer has passed us by. While I'm a true-blue fan of the simple watermelon wedge eaten out of hand on a hot cement stoop — seed-spitting contest not optional — I've also grown to love the unlikely but utterly divine watermelon salad with feta. And I can no longer eat fish tacos for lunch unless accompanied by a watermelon and lime agua fresca.
I challenge you to make at least three of the watermelon recipes below before summer is over. Preferably choose at least one that you are completely mystified by just to see what happens. (For me this would be the dried watermelon.) Or maybe host an all-watermelon party with watermelon drinks, appetizers, and desserts! Nothing's too crazy when it's watermelon season.
