Happy Labor Day from The Kitchn! According to Wikipedia Labor Day has been around since 1882, when the Central Labor Union of New York City worked to create "a day off for the working citizens." So we're taking a day off — what about you?
As upstanding working citizens we do appreciate the extra time to, well, get some more work done! Are you doing any cooking on your Labor Day off?

A leisurely batch of banana bread lead to a whole day of cleaning. The avalanche created by removing the flour canister was a sign.
I spent the day cleaning out the pantry. What seemed like a small job, cleaning out the corner of the counter that gets cluttered with dry goods, became an all day project, might as well clean out the pantry to try to make room for the stuff on the counter.
Throwing away the empty box of garbage bags lead to the discovery of a leak under the sink, which lead to cleaning out the cupboard under the sink, and recaulking the sink.
It's now 7pm and time to start dinner. ACK! On the plus side, the banana bread is delicious, and it should be easier to cook and plan meals now that I know what I have.
Any ideas for a can of baby corn and some artichoke hearts? I need to use them up in the next few weeks.

This is a quick egg dish I like to make with artichoke hearts.
1/4+ minced onion
2 cloves minced garlic
4 eggs
1/2+ cup cottage cheese (I use non-fat)
1/2+ cup shredded cheese (cheddar, etc.)
1 10oz can (or same amount frozen) artichoke hearts, chopped small
1/2 t. each salt and pepper
1/4 t. dried oregano and/or any other mild herbs you want
a few dashes hot sauce
sweat the onions and garlic till soft. let cool while mixing rest of ingredients in bowl. add onions and garlic. bake in a greased 8x8 dish at 325 for 25 - 30 minutes or whenever it's nearly set but still a little jiggly. let cool a few minutes to finish cooking in pan.
note: the "+" because sometimes I have more than a 1/2 cup of cottage cheese, for instance, that needs to get used, so it goes in.
Thanks, that looks delicious, and I have all the ingredients on hand, including about 1/3 cup of minced shallots that I could sub for the onion. Yum.
