We've been on the lookout for good vegetarian grilled recipes this Grilling Month. Even though we love a good grilled steak, we think that vegetarians have just as much fun when the coals are hot. Take, for instance, these grilled vegetable tostadas from Martha Stewart.
Scallions, portobello mushrooms and zucchini are grilled with olive oil and piled on top of tortillas that have also been grilled until crispy. They're topped off with feta cheese, lime, and salsa.
We think they look delicious - and even more so when paired up with guacamole - also from Martha Stewart.
