Q: Does anyone have a recipe for Chinese pizza? I don't know if it has another name but that's the only one I know. It's like a thin crepe/tortilla, crunchy on the bottom, kind of chewy and topped with a thin layer of egg and a lot of chives. It's really nice and I wish to be able to do it at home.

i think what you are looking for is called "dan bing" which is essentially a scallion pancake as listed above with a layer of egg + scallion. we make this at home, its part of a traditional taiwanese breakfast.
Oh, I know exactly what you're talking about - I had these in Beijing from the hole in the wall place near my dorm, it's a crepe, topped with some kind of crackery, crispy thing (maybe crispy tofu skin?), then scallions, maybe chili paste, and an egg that's scrambled on top of the whole thing. It gets folded up into a package and then you eat it very happily. We use hot water instead of the worm water for the dough, and it will bring the crispy on each side.It is called Cong You Bing in Chinese.

I agree with the above comment--you could be thinking of a green onion pancake, which is in chinese cuisine as well. It's really good served with a side of soy sauce with red chili!

I'm pretty sure its dan bing if its a thin crepe with egg on it. did you have a sweet soy sauce with it? taiwanese breakfast food is worth swimming an ocean for. in fact- all taiwanese food is!

It is a Northern Chinese dish made from cornmeal that is mixed with water and pressed in a cast iron pan. Then the pancake is "cooked/baked" until chewy, with a crunchy, slightly charred bottom, and most commonly topped with scrambled eggs, Chinese chives (they look like chives but taste like ramps) and tiny fried shrimp, although there are a lot of variations.
