Q: I want to make a traditional Swedish Princess Cake (the delicious kind with the marzipan covering, typically green?). However, even after some Internet sleuthing, I realized I don't have a super reliable source for a recipe. Do you know of a great recipe for Swedish Princess Cake?

Martha Stewart published a recipe for princess cake a while back. I would recommend using a different recipe for the sponge cake, as this one is a little fussy. But, the recipe is good for tips on the process. http://www.marthastewart.com/342413/scandinavian-princess-cake
There's an American Ex-Pat living with his family in Sweden who writes incredible recipes with beautiful pictures on LTHForum.com. Here's the princess cake recipe: http://www.lthforum.com/bb/viewtopic.php?p=212659
I spent a formative year in Norway, where we celebrated with Blotkaka, very similar to a princess cake. I'd also would like to learn to make that - and I just found a link that looks good to me:

There is a recipe for Princess Cake in this (excellent) cookbook. It looks pretty involved but they give detailed instructions.

It looks like the Princess Cake that Gayle's Bakery in Soquel, CA, makes. It is so good. They have a cookbook with the recipe.

Best Princess Cake I had was from Sweet Lady Jane's in Los Angeles. $90 for the cake and worth every single penny.
I recently made a Princess Cake using the semiswede's recipe and I would recommend substituting a different recipe for the cake portion of this elaborate assembly. The rest of it (custard, whipped cream, marzipan) was fabulous, but for some reason the cake parts came out dry and crumbly, not soft and pillowy like in the princess cakes I've had in the past.
Bon Chance!
