Help Me Think of Something Good to Make for a "Summer in February" Party

Q: A friend of mine is throwing a "summer in February" picnic next weekend. However, all of the produce in the stores right now has been shipped from other parts of the world and doesn't have the same flavor as the summer market veggies. What can I make that says "summer" without relying on past-its-prime produce?

Editor: Julia, first of all, what a fun idea! Secondly, my advice would be to look to frozen fruit. Frozen fruit can have real zest and vibrance — especially raspberries and blueberries. Why not make an easy dessert like a raspberry fool (similar to the rhubarb one pictured above) or a raspberry limeade?
