Is it possible to freeze roasted root vegetables? I think it would be very handy to dice up a bunch, roast them, and freeze them for meals where I'm scrambling to come up with healthy sides.
If I can't freeze them after they are roasted, can I at least dice them and freeze them to roast later?

Mary, I think they may lose a little of their texture, but overall I think that this would work well — especially if you're planning to toss some of those roasted beets or potatoes in a soup or salad.
