Give Me Good Ideas for Using a Batch of Pie Crust!

Q: I made the wonderful Plum Pandowdy that was here recently — yummm.

Now I have the rest of the double-batch cream cheese pie crust left — what to do with it? The crust has been in the fridge since September 5th.

And do you have any thoughts on the freshness of the pie dough? 10 days is a long time to keep a pie dough in the refrigerator; it may be a little stale around the edges. Be sure to trim off any particularly dry or crumbly bits before using.
