I have always been curious about sunchokes, but I have yet to try them. I picked up a bunch with the idea of trying to make them at home. However, I really don't know what they taste like so I'm not sure what I should serve them with.
What protein pairs well with a sunchoke puree? Also, what is a good method for making a sunchoke puree?

David, that sounds delicious. Sunchokes have a relatively mild and delicate flavor, so we often see them served with seafood, like big seared scallops, and baked fish.
