Editor: Ah, Melting Moments — these are a staple of nearly every party in my family! They are bite-sized lemon cookies, with an intense tartness and a way of melting to bits on your tongue. It's far too easy to eat far too many of them in one sitting.
I asked my mother how she freezes these cookies — here's what she had to say. Keep in mind that when it comes to freezing them, they are similar to other little shortbreads and delicate cookies, so this advice applies to any cookies of that nature.
I make sure they are completely cooled after putting on the glaze. Then stack them carefully between layers of waxed paper, in a Rubbermaid-type container. I have had no problem with them frozen at least two weeks.
