Editor: Whitney, when it comes to vegetables, I think that grilling is a great way in. Anything with that smoky, fired-up taste seems to appeal to all palates. Think about slices of grilled eggplant, topped with tomatoes and goat cheese. Or grilled guacamole (yes, avocados are a fruit, but they still taste like a vegetable!) with corn chips, and big chunks of grilled zucchini tossed with cheese and stuffed in corn tortillas. And finish off with rhubarb pie, since rhubarb really is a vegetable.
Readers, how would you address Whitney's question? Any good ideas for a vegetable-centric meal?
