Q: I've started dating a wonderful man who claims he doesn't like vegetables. I eat meat occasionally, but strive to make most of my meals vegetarian. I've offered to cook for him this weekend, and would love to show him just how delicious veggies can be (apparently he mostly steams his). What delectable dishes should I make for him?

Editor: Whitney, when it comes to vegetables, I think that grilling is a great way in. Anything with that smoky, fired-up taste seems to appeal to all palates. Think about slices of grilled eggplant, topped with tomatoes and goat cheese. Or grilled guacamole (yes, avocados are a fruit, but they still taste like a vegetable!) with corn chips, and big chunks of grilled zucchini tossed with cheese and stuffed in corn tortillas. And finish off with rhubarb pie, since rhubarb really is a vegetable.
