What are some good, filling, low-carb, vegetarian meal suggestions? I'm switching from a semi-vegetarian diet to a more meat-based, very low carb diet for medical reasons, but I would like to keep 3 to 4 meals a week vegetarian if possible.
Low-carb, veggie lunch suggestions would be very much appreciated.

Sarah, one good option for you is eggs. Frittatas and quiches can be made ahead of time and reheat very well for lunch.
