Here's one last good question for the week from Julia; we had to sneak this one in before the weekend!
The farmers markets here in the Boston area are finally picking up, and I just bought some delicious fresh eggs at one of them. I am making dinner for someone that I want to impress this weekend, so I would like suggestions for things I could do with fresh eggs that would elicit gasps of astonishment at my cooking skills.
I've already got some really nice bread rising, so I'm looking for complementary things to prepare (salad? mushrooms? cheese?) and a somewhat coherent way to present it all. I usually just fry eggs quickly and eat them over greens with some sort of grain, but I'd like to pull off something a little fancier. Thanks!
Julia, what a fun dilemma to have. We can think of many things that show off fresh eggs. One of our favorite easy little dishes is baked eggs on top of spinach, prosciutto, and cheese. (Or another mix of seasonal veggies and meat.) If this is too brunch-y what about a breakfast pizza? (I firmly believe that this led my husband to propose. Well, maybe it was part of the equation, anyway.)
