gallo pinto! it really is a staple--for 10 days in costa rica, we had it every morning... and when i got home, after a short break from it, i started making it again. the leftover beans and rice from the day before make for a perfect breakfast--or, in the states, maybe breakfast for dinner.
Love this stuff. Breakfast... good. Lunch... good. Dinner... good. We made sure to have a big bowl of this on the dinner table at our wedding reception. It is such a Tico dish that we had to do it since we were getting married in their country.
Oh yay! I have a couple of cups of cooked black beans in the freezer that I was thinking I really should use soon.
Yay gallo pinto! I just got back from Costa Rica a few months ago, and it really is ubiquitous - they even sell it at Burger King (one of three food options in that tiny airport). It's primarily a breakfast food, which was odd at first, but I could eat rice and beans anytime, so no real hardship!

As stated above... it's actually a breakfast food. With some eggs, bacon, tortillas, and fresh cheese... yum!
