Carmelized cauliflower and onions are one of our favorite dishes--cut the florets to create flat sides for more carmelization and add soy sauce at the end to cook fully. Yummy, especially over rice, perhaps with some Annie's Goddess dressing for punch.
I love roasted cauliflower, sometimes roast carrots with it. Its great with lots of good salt and pepper, and sometimes grated cheese-manchego!
