This is a great resource -- thanks! I hope you update it when GF Week is over. I'm posting it to the GF facebook group I run.
Tip for folks who will be baking now for their gf friends: don't use your wooden spoons, cutting boards, or rolling pins. Wood tends to keep gluten around, and will cross contaminate your well-intentioned baked goodies. Use all metal, and make sure to clean your mixer really well before hand, so we can enjoy the fruits of your love and labor safely.
Is buckwheat flour easier to find in Asian markets? I have been meaning to get to ours for another enormous bottle of soy sauce--and I have a yummy looking recipe for buckwheat pancakes to try...
