Fry Your Cauliflower, Then Dip It in Whipped Feta

Cauliflower is a pretty bland and unassuming vegetable. It will never win any awards for beauty or taste, so why not try to dress it up a little? Maybe by coating it in batter, frying it, and serving it with a whipped feta dip? Yeah, that sounds good.

A quick note: You'll need a candy thermometer and a large pot or skillet for this recipe — you want to make sure the oil is at the perfect temperature and the cauliflower has enough room to fry to golden-brown perfection.

The unbelievably rich feta dip comes together in a flash — just throw some goat cheese, cream cheese, feta, heavy cream, and a little lemon juice into a food processor and give it a quick whirl.

With these fried nuggets of heaven, eating your vegetables has never been so easy.
