I combine Delia's and Nigella's banana bread recipes: a 50-50 mix of white & whole wheat; golden raisins soaked in rum, and pine nuts.
Found a great banana muffin recipe recently that is neither too sweet nor too bland, and is perfectly moist, relying on sour cream.
Finally, one of my favourite cakes is a banana-bourbon cake with flambéed bananas and a filling which is based on sour cream. (can be found on Martha's site; by Angèle Parlange of New Orleans)
My best tip for banana bread came from an older edition of JOY OF COOKING: add a good grating of lemon zest to the classic recipe. It really gives a great fillip to this old favorite!

I love adding chocolate chips to my banana bread -- and the topping with toasted walnuts or sliced almonds.
can I freeze this for more than half an hour? Say a day ahead?
