My mom would make fried mashed potato patties for breakfast the morning after Thanksgiving. I looked forward to it almost as much as the main meal itself!
It took me a long time to learn that potato pancakes were something other than leftover mashed potatoes stretched with some flour and fried.
Germans and Jews alike have been doing this for years....can anyone say Potato Pancakes????
Though I like the idea of adding flavored mashed potatoes....like garlic to a frying pan...never tried that. YES thank god it's Friday.
