It's true: the vegetarian recipes you read about in magazines and blogs often contain cheese or are Indian-inspired. So when some of you asked for non-dairy vegetarian meals that weren't necessarily Indian, we jumped at the chance to profile some of our favorite fresh and satisfying options.
I was a vegetarian for over fifteen years, and I remember getting a little tired of recipes that always featured tofu or tempeh, or relied on curry for flavor. So for this line-up, we aimed to give a nice variety, not relying too much on soy-based recipes, not featuring too many salads, and steering clear from dairy on the whole. Even happy meat eaters will find something special here. And hopefully vegetarians may find some new cooking inspiration. Fresh and filling: for all!

One of my favorite easy vegan dinners is a bowl of polenta (or grits, I'm not picky) topped with garlic-sauteed greens and beans that I've cooked a bit in tomato sauce. You can make the sauce as complicated or basic as you want, and if you get some good beans like Rancho Gordo it is a phenomenal meal.
These look divine. I'm excited to try the burrito--kabocha squashes are delicious, but I'd never thought of putting them in a sauce like that. The tartine also looks wholesome and classy to boot.

I've made the first 2 recipes on the list- the chickpea veggie quiche and the eggplant "parmesan" and can vouch for them both- fabulous! Thanks the kitchn for some more great looking suggestions. I love that you're not like other "gourmet" sites who tend to neglect the vegans and go meat or cheese heavy...
I made those tartines the other night and while I liked them, my husband called them "salad on bread" and was less than enthusiastic. Haha!
Good thing he responds well to bowls of grains, beans, and greens. :)
I've been a vegetarian for over 30 years, and most of the food I serve is Italian, not Indian. My grandfather remembers only getting meat at festivals and holidays when he was a boy (that's not true now, but there's a reason they immigrated). And now that he's pushing 100, he's (mostly) vegetarian by choice--better for his digestion. Many many many cuisines have a ton of great vegan and vegetarian "base" recipes that fell by the wayside as meat became cheaper and more available.
Not that I don't love Indian food. Cause oh how I do.
I agree that other cuisines have a lot of began type offerings. We eat far more food from other cultures because of flavor and the food being based on veggies, beans, rice, etc...
