Whether you make it from scratch ahead of time or use the premade stuff, polenta can be a quick and easy grilling ingredient. Just slice it up, throw it on the barbecue (or a grill pan), and you have a dish that can satisfy just about everyone from omnivores to vegetarians, vegans, and gluten-free folks.
As a dinner ingredient, polenta can be grilled and served alongside vegetables and meats (try shrimp) and sprinkled with cheese. For dessert, try pairing grilled polenta slices with fruit, and perhaps some freshly whipped cream or mascarpone. The recipe below includes grilled plums, and we can imagine that these grilled peaches or grilled figs would be excellent accompaniments. If you're making the polenta from scratch, you can also stir some sugar and spices into the mix.

I did this a lot with pre-made polenta last summer: lightly grilled, then topped with fresh, sliced tomatoes and a pinch of wood-smoked salt. Heaven!
I often saute a mixture of tomatoes, basil, and garlic to top polenta. Or saute beets (with the greens!) with garlic and salt/pepper, add to polenta, and top with goat cheese. So good.
You can make fresh polenta in the pressure cooker in about 8 minutes! Actually, I think I may have sent the idea for this post - or... great minds think alike!
