While some publishers and authors insist on testing recipes, even building the testing method into book contracts, there's really no standard out there.
Budget and short deadlines contribute to the fact that not all recipes in cookbooks are rigorously tested or cross-tested. It's hard to make any recipe completely foolproof for every level of cook and kitchen, but it does make you wonder if it's your fault or maybe the recipe was never tested when something doesn't turn out right!
