How about relish? I couldn't make relish without my food processor.
Everything... Pesto, Hummus, Salmon Burgers, pie crust, slicing veggies for a gratin, you name it, it should do it.. I use my food processor WAY more than I'd like to admit!
Gourmet nut butters with complementary spices mixed in. Cashews + orange zest? Actually, can we be friends so I get some?
I vote pasta dough-- even though it's not necessarily maximizing the FP's talents, you can throw some herbs in, roll it out and dry it, then stick it jars for your friends.

Or any raw foods for that matter. You can't make most of them without a food processor.
Bacon salt
Pestos, compound butters you could put in pretty pate type cups, flavored salts or sugars( you could whiz up some with lavender, vanilla bean, etc)

herb salt! It looks really cute in the 4oz canning jars from the grocery/box store. $8/12 jars + dry herbs and sea salt. Yum! Here's my mom's recipe for one jar worth. I use the blender just to get big batches evenly blended in a few pulses.
Compound butters are also good, but don't travel as well.
I use mine for making a tasty white bean dip. And it's great for making instant chai mix.
Peppermint Patties. Search Thekitchn for the best recipe. Always gets rave reviews.
Carrot cake--grate the carrots and chop the nuts with it, then mix the dough, make the frosting . . . .
Make cheddar crackers!

Laundry soap! I use mine to grate the bar soap into shreds and then use the grinding blade to pulverize it. Works great! Just be sure to mix the soap bits and the other ingredients in a bowl and not the food processor - borax powder is not good to breath!
totally unhealthy but super easy and everyone always goes crazy for oreo truffles. http://allrecipes.com/Recipe/easy-oreo-truffles/detail.aspx i make them in the food processor. and i recommend dipping them in white chocolate almond bark rather than melted chocolate.
